Six Word Saturday:

Our cakes went down really well.

Several months ago I posted about starting a new job in a department with a cake rota. This week it was finally my turn. I decided on taking my super easy brownies as they always go down well and two others earlier in the rota have proven that brownies would be a hit with the team. One colleague who will bring in cake when it is his turn – but prides himself on being super fit and berates us for eating cake every week – ate at least 3 brownies.

It is rather convenient (for me) that my other half is currently working from home, so I also got him to make his fabulous banana cake, which was also a big hit so I thought I would post the recipe, since I haven’t posted any recipes in a long time.cake2

Banana Cake Ingredients:

  • 1/2 cup sugar
  • 120g butter
  • 1 egg
  • 2 over-ripe bananas
  • 1 teaspoon minced ginger
  • 1 cup (175g) self-raising flour
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon

Method:

  1. Cream the butter and sugar
  2. Add the egg and minced ginger and mix in.
  3. Add mashed bananas and mix in well.
  4. Slowly add the dry ingredients, making sure they are completely mixed in with the wet ingredients.
  5. Bake at 190ºC for 40 minutes.

Note that this can be made into a slightly larger cake by using 3 over-ripe bananas and 280g flour.cake3
